Objectives: This training is designed for the participant to be able to design a menu suitable for their  local clientele and in line with current trends and innovations.  

6th October (10am – 12pm)

Module 1: Basics of Menu Planning 

  • How to decide on a menu theme 
  • Framework of the menu – number of items etc 
  • Menu design and visual presentation 
  • Common menu design mistakes 

13th October (10am – 12pm)

Module 2: Customer insights and target market 

  • Target market research 
  • Competitor analysis 
  • Demographic interests and trends 
  • How to attract your customer segment 

21st October (10am – 12pm) 

Module 3: Food trends, menu innovation and local suppliers 

  • Food trends throughout the world 
  • Food trends in your local area 
  • How to utilise trends to create innovative product offerings 
  • Your local suppliers, benefits of supporting local and the unique selling point opportunities
